Spaghetti Sauce

I have long been searching for a spaghetti sauce recipe that was good.  You know, not just a bunch of diced tomatoes, something with some presence.

Well I found a recipe on Tasty Kitchen for a goulash that had an okay sounding sauce, so I decided to use it for my inspiration point and dive in from there.  So here's my version of it:

  • 1 swirl around the pan of olive oil
  • 1 med-lg onion, chopped
  • 1 sm green pepper, chopped
  • 1 - 1.5 lbs ground beef, browned and drained
  • 1/2 tsp black pepper
  • 1/2 tsp Tony Chachere's Original Creole Seasoning OR 1 tbsp chili powder
  • 1 1/2 tsp paprika
  • 1 tsp garlic salt
  • 2 cans diced tomatoes
  • 1 can tomato sauce
Heat the olive oil over med-high heat.  When hot add the onion and green pepper and cook until onions are transparent and green peppers are soft.  Add the remaining ingredients, mix well and simmer over heat while cooking spaghetti according to package directions. 

Now, we are the kind of family who likes our sauce all mixed in with our spaghetti.  There will be no sauce on top of noodles around here.  Mix it all together and we are one happy bunch!  That's just how we roll around here!

I will say that I originally used 1 tsp of the creole seasoning and it was a little too much, even for our spicy selves.  So I would cut it back to at least 1/2 tsp or even 1/4 or if you really don't like any heat, I would go with chili powder...same idea, just no heat!

I suppose you could call this a Cajun spaghetti or maybe Mexican spaghetti...you could definitely smell the heat when we came back in the house from playing in the backyard with Papa Jene and Grandma! But it is a keeper.

If it weren't 9:00 and the kids hadn't completely worn me out today, I would be knocking out some scrumptious cupcakes.  But there is always tomorrow..so come 12:30 there will be a "whole lot of baking going on" round here!!!  I can't wait to see how they turn out...and I am thinking they will be DELIGHTFUL since the have Oreos as an ingredient...if they are good I will share, maybe!

Easter Countdown


While blog hopping about a week ago I came across a new blog, Eighteen 25, that I am just sure is going to be a new favorite of mine.  One of their very first posts was about this cute little Easter countdown.  You can go to their original blog post here to read about how they put theirs together.  They used cute little rub-ons to number their eggs.  I didn't have number rub-ons handy, and of course being 60 miles from the closest craft store meant I had to use the best thing available.

And the only egg carton I had was an ugly blue one, so I filled a cute basket with grass and nestled our egss inside instead.  The kids don't seem to care that they aren't in the egg carton.

Eighteen 25 has some good ideas for activities to fill your eggs with and I used some of their suggestions and then did a few of my own.  Here's what I did:

1 - Have an Egg Hunt
2 - Read an Easter Story
3 - Make an Easter Treat and EAT it!
4 - A piece of Easter Candy
5 - Send an Easter Card to a friend {friends these are going out in the mail tomorrow!}
6 - Candy
7 - Color an Easter Picture
8 - Have an Egg Hunt
9 - Decorate Easter Cookies
10 - Candy
11 - Dye Easter Eggs
12 - Clues to find their easter baskets

I took a look at our calendar and on the days that I knew we would be pressed to fit in another activity I simply put a couple pieces of Easter candy in the egg for the kids to enjoy.  They usually want to open the egg in the morning, so they think it is a real treat to get to eat a little piece of candy after their breakfast!

I also have to admit that I put the activities in the eggs in the wrong order, but didn't realize this until after we opened the first egg.  I decided to just go with it and it would be a counting lesson for Cambree...plus I didn't want to re-do it!

This really is fun and I am glad it is also something that can be done rather easily and repeated from year to year.

Scrapbook Love

I have been working on getting caught up on my scrapbooks lately.  I have decided that if it is going to get done, digital is the way to go.  Here's a few that I have done in the last several months.  I whipped out the boys halloween pages this evening...much faster than my traditional scrapbooking methods.  Don't get me wrong, I still LOVE to play with paper and scissors and glue, but I also love my computer and this new digital scrapbooking thing!  I think my albums will be "hybrid" from now on.

Sad But True

This is so sad and embarassing to have to admit, but the most exciting thing to happen to me in the last {I can't even think of a good time frame} is this...



You are looking at our new refrigerator.  Well this isn't actually ours, it's the photo from the website, but ours should be here in about 10 days!!!  I guess I really should have taken a picture of the old beast, so you could grasp the fullness of my joy.

The old one has "worked" fine for the last 10 years {and an undetermined number of years for its previous owner) but it has slowly been going downhill.  Add to that the fact that it is an energy hog AND it is not pleasing to the eye in the least and you have our wonderful refrigerator.

A few days ago, maybe a week, I mentioned to Jeremy that I didn't think it was keeping things as cool as it was supposed to.  And last night I told him the door wasn't sealing good and you really had to push on it to get it to close.  He replied, "Well, guess you better get a new one."

By the time I went to bed I had one ordered!!  And in the morning when I got up, my email confirmation said it should be in the store, ready for pickup, by April 2nd.  Ohhh I CAN'T WAIT!

Prep Ahead!

So last time I posted I was talking about cooking from scratch and how much I enjoyed it.  I also mentioned that I know it takes a greater committment to do this, but I have a few things that make it easier, more enjoyable for me.  Some of these may be common sense things to everyone, but maybe they will help someone spark a new idea.  And if I am lucky a few of you will share some tips that I haven't thought of before.

TIP #1 - The freezer is your friend!!!!
Anything that you can do ahead of time and keep in the freezer, ready to pull out and add to a dish is a fantastic time saver. Some things I like to keep in the freezer are:
  • chopped onions - peppers
  • browned hamburger - I store in increments that I use for cooking for our family - 1.5 lbs per baggie
  • cooked chicken - deboned and chopped...ready to go at a moments notice
  • cooked, crumbled bacon
  • pancakes and waffles - and NOT Eggos!  I always have a few leftover from our breakfast nights and I just whip them up and put them in the freezer for a quick and easy hot breakfast during the week.
  • cooked sausage - both patties and crumbled
  • broth - chicken and beef
  • cooked roast - again, we aren't big fans of leftover roast, but we do like bbq beef, roast beef sands and beef & noodles.  So if we have leftover, they get chopped up and put into the freezer for a quick meal later.
  • cookies - this is a new one for me and I have honestly mentally slapped myself several times for not thinking of this one sooner.  I have my most favorite chocolate chip cookie recipe from my mom, but we like them most when they come straight from the oven.  And this recipe makes a TON of cookies and we can't always seem to eat them fast enough {strange as it sounds, it's true!!!}.  I am going to admit something here...I had resorted to buying the frozen cookie dough from Schwan's because it was quick and easy!  We could have a warm cookie from the oven anytime we wanted.  Then a couple of weeks ago I was reading another blog...I didn't mark it and can't remember which one, so thank you whoever you were...and she mentioned that they liked their cookies warm from the oven, so she made a batch, scooped them out and froze them!! GENIUS!  I did this last week and it was 100 times better than the Schwan's cookies.  I only made a half batch the first time because I was a little nervous about them going from freezer to oven, but it worked perfectly!  So from now on, we will have a stock of homemade cookie dough in our freezer...and we are going to save money!!! YEAH!
  • cupcakes - we have cupcakes for almost ANY occassion at our house and I love having them ready to pull from the freezer, frost and enjoy.  The great thing about these is that they will thaw very quickly and can be enjoyed not long after being taken from the freezer.
  • sugar, flour - again these things are bought when on sale and stored in the freezer until needed.  I don't know if they NEED to be stored in the freezer, that's just what I have always done because that's what my mom and grandma did!
  • chili, stew and soups
  • meatballs
  • enchiladas
WOW!! Looking at that makes it seem like I must have a GIGANTIC freezer.  I promise I only have one upright deep freeze and the freezer above my {ANCIENT, STILL WORKING} refrigerator.  Baggies are your friend if you go this route.  I would love to find a better, more eco friendly method, but I just haven't come across anything more functional and practical at this stage of my life.  This is a big project on my to-do list though!

So, when do you get all of these things done and stock-piled?  Well, it does take a little time, but you can do most of it WHILE you are doing something else!  So

TIP #2 - Multi-task!
A good example of this is when I find produce on sale.  Instead of just buying the onion{s} I need for that week I buy several extras.  Then when I am chopping what I need for the current week, I just go ahead and chop the rest, put in a baggie, label and throw in the fridge. This is your best friend for this task!

When you are browning hamburger, do 10 pounds or so at a time.  It really doesn't take that much more time and you will feel so good knowing that you have 9 packages ready to go in the freezer next time you need them.

When chicken goes on sale buy 2 or 3 times what you need for that week.  When you get home go ahead and throw the excess in a big stockpot with whatever you like to season your broth with and get that chicken cooked.  You can then debone and chop it later that evening while you are preparing the evening meal.  By the time you turn off the kitchen lights you will have prepared and ate a delicious meal AND gotten the meat for two more meals ready to go.  Next time you have a chicken recipe, just pull it from the freezer....easy, peasy!

Bake a double or triple batch of cookies, or whatever it is you like to keep in the freezer.  Bake those you want to use on that day, put the rest in the freezer!

So, I think you can see how quickly and easily you can get your freezer stocked up.  Anything you can prepare double of, do it and freeze the extra!  It takes a little extra time on the front end, but when you come home from a stressful day of work and the last thing you want to do is cook a meal from scratch, you can save yourself from the expensive bill of ordering pizza and the guilt of "not" cooking, by pulling one of your own "frozen foods" from your freezer!  It's not only AS easy as purchasing something from the frozen foods section of your grocery store, but it is HOMEMADE and made with love and goodness.  Just give it a try, I promise you will never go back!

TIP #3 - Keep it real!

What does that mean?  I guess what I mean it don't set yourself up for failure! Don't go into this with the expectation that you are going to be cooking 4 course, gourmet meals EVERY day for your family!

Realize that while you are trying your best to cook healthy, save money and be the best wife.mom you can be there are going to be those days when it just gets to be too much.  On those days, pick up the phone, order the pizza, eat off of a paper plate and know that even Mom's need a break sometimes!  Your kids will love the pizza, your husband will appreciate your less stressful, bitter attitude and you will feel refreshed because for one night you can just enjoy being WITH your family.

I admit that I have these days almost monthly.  There always seems to be that ONE day where I just don't have the energy or motivation to be in the kitchen.  I want someone else to do the work for me.  I simply want to sit and enjoy a meal, without the prep or the clean up!!

TIP #5 - Cook what you like!

If hearty, southern food is what you like, then DO NOT go searching for fine French Cuisine recipes!  Be true to who you and your family are in the kitchen and you will experience much less frustration.

Having said that...don't be afraid to try a new recipe that sounds appealing to your family!  If they like it, WONDERFUL!!! However, if they don't, just toss that one and try another.  You are NOT a failure because a recipe wasn't as tasty as it sounded on paper.



Whew...that turned into quite a LONG post.  I am wondering why I am even writing all of this.  Does anyone care?  But then I remind myself that I am doing this blog for myself and my family.  One day, hopefully, Cambree will be able to read these words and be encouraged as she experiences taking care of her family and being in the kitchen.  And if these little glimpses into my life help someone else, well that's just a bonus!

Wednesday With Westynn

Hello peeps!  It's been ages since we last talked.  Or I guess since I did the talking and you did the listening!  I am having a brief moment of relief from feeling bad so Momma said I could get on the computer to do a post.  I had to explain to her that my followers don't like being kept in suspense about what is going on in my life this long.  She was a tad unsympathetic, but when I explained that I wouldn't cry the entire time I was posting she caved.  At this point she will agree to anything that keeps me happy.

You have to understand that since Feb. 23rd Momma has had one kid or the other not feeling good for at least some part of each day.  Yep, that means that today is 15 days of grumpy kids.  I started not feeling well on Sunday after church and it has been a rough and rocky road since then.  I have been running a temperature, had a cough, congestion and just generally have been grumpy. Momma ought to know that I love her though because all I have wanted for the last four days is for her to hold  me.  Now I'm sittin' in the bumbo and feeling better.  Heck, I am even starting to act more like my usual self.

In other news...amongst all this sickness I also managed to get my first TWO teeth.  That's right. 2.  And only days apart.  If you look real close you might be able to see them just poking through in the picture up there.  I also went last week and had my 6 month check up.  I weighed 17 lbs 10 oz and was 25 3/4 inches long.  That means that I have gained over 11 lbs since birth and grown almost 6 inches!  WOW, that's amazing progress for 6 months.

I am still getting my mom up during the night but she has warned me that once I get over my illness I am going to have to learn to sleep all night.  Really I know that she is right because I am not hungry, I just like seeing her face during the night and knowing that she hasn't forgotten about me back here. I am going to try really hard not to give her too many troubles while we go through this process.

My sister, Cambree Jane, celebrated her 4th birthday and I got to see once again just how much our Momma loves each of us!  She {momma} even cut off part of her finger getting ready for C's party!!! I wonder what injuries she will sustain getting my first birthday party ready?  I hope it isn't serious.  Cambree's party was a lot of fun...there were lots of people here and they were all so nice.  My friend Owen came up and we got to know each other a little better.  Momma assures me that once we get older we will have more fun together!  I aslo got spoiled by my friend Sloan!  She loves to hold me and I just think she is pretty fun too.  I am glad they all came to our house to see us.

We also added a new member to our family!  I guess my parents are crazy and think that having sick kids isn't enough of a challenge!  Seriously, who do these people think they are?  Trying to take care of ailing babies AND a new 7 week old puppy?

But he's pretty cute!  I haven't really developed an opinion of him yet because of being sick.  I'll let you know how it goes between me & Oscar.

Homemade

It's been awhile since I have posted anything "Kitchen" or "Saving" related, so today I thought I would post a couple of things regarding both!

One of the reasons I think it has become so expensive to feed our families is because we have become so busy in our daily lives and have come to rely on pre-made, packaged foods too often.  Now, don't get me wrong, I am of the opinion that there is a time and place for shortcuts and I know that I take my fair share of them.  But I am also always on the lookout for something that will save me some money and be SO good that my family will never know it didn't come from their favorite jar! 

Some of you are going to be thinking, "Yeah, that sounds great Sara, but those things take time and I am all about saving time.  My schedule is crazy and I just don't have time to whip up something from scratch every night for dinner."  To that I shout, "AMEN SISTER!"  I hear ya!  So before you start hating me, I am going to let you peak into my thoughts for a moment...scary I know!

First of all I am by no means a "health nut" but I do believe in trying to eat healthy, while still enjoying it all!  Kind of an oxymoron, right?  What that means is that I want my family to eat from the food groups, but to also really SAVOR and enjoy what they are eating.  With that being said, one of the main reasons that I like something homemade or from scratch is the control that I have of what goes into it.  I don't have access to preservatives or chemicals that are sometimes added to foods to lengthen their shelf life, therefore, they don't make it into my dishes.

Second reason that I like something homemade, from scratch...it reminds me of the way my grandma used to cook and I feel closer to her and totally more DOMESTIC this way!  Each time I whip up a recipe from the ground up it makes me think of all the love that went into all the food my grandma used to prepare for our family.  That's really a silly reason to want to cook from scratch, but it's my truth!

And finally, cooking from scratch, homemade, generally results in SAVING MONEY!  I know that there are occasions and certain items that are probably cheaper to buy pre-packaged and that's fine to do.  But don't you want to have at least a few recipes in your backpocket that you can call your own when you set them down on the dinner table?  I know that I do!

Another Bundle of Joy

Carrot Display

Isn't this just the cutest display of carrots you have ever seen?!  Seriously, everyone should experience carrots dripping from their nose...right?

{At his 6 month check up, W weighed 17 lbs 10 oz and was 25 3/4 inches long...he's right in the 50th percentile! That's our average baby for ya!}

Ups & Downs

Since Saturday we have definitely had a week of ups and downs.

Since Tuesday the 23rd, the Stapleton kiddos have been sick. Preston first came down with it, then Cambree got it after her party on Saturday and Westynn has picked up the cold bug somewhere along the way. It hasn't seemed too bad, until today!

Bless her heart, this little girl is a trooper when she is sick.

She is the total opposite of Preston. Preston is a total drama king and every little thing is a major ordeal. Cambree can have a fever above 100 and you would never know it. She just takes it all in stride and generally rests.

Today was a totally different story though. I thought she had made it through the toughest part of the virus, but I was WRONG! A little after 3:00 pm I went to check on Westynn and when I came back to the living room, Cambree was curled up in the chair and looked to be resting. I didn't think much of it because I thought she was just recovering from her illness. About 20 minutes later Westynn was up and had soaked through his clothes so I was changing him and Cambree started just crying and telling me that her shoulder hurt. Again, I figured she had slept wrong in the chair and had a little stinger. But once I touched her she was burning up and she was unable to calm down. Then she started telling me that her tummy hurt, then her neck. I was getting concerned by the time Jeremy came home. He managed to get her to take some tylenol, but shortly after she said to me, "Momma, my heart is racing!" Sure enough, it was beating a mile a minute.

We ultimately decided that it warranted a trip to the doctor. Since she doesn't complain about not feeling good and she was definitely in some pain. And the fact that it all just appeared out of nowhere gave me reason for concern.

After an hour in the e.r. {because of course it was 5:02 when we got to the hospital} it was determined that it is all a result of the virus. It could possible be mono but we won't know for sure.

I feel so bad for her. She hasn't eaten much since Saturday, but has been drinking at least, so I haven't been worried about dehydration. But she does look pale and skinny to me. I know she will be fine, but it sure is hard when your babies don't feel good and there isn't a thing you can do about it.

I am ready for this little girl to be healthy again!
